Farm to Glass in Three Miles

At Haleiwa Distilling Company's tasting-room bar in Waialua, every craft cocktail starts with the North Shore itself. The spirits are distilled a few feet from your barstool, and nearly everything else in your glass comes from farms within about three miles of the mill.

We make every syrup in house. Our honey comes from Hi Honey Farm, just down the road in Waialua. We hand-squeeze limes from the local farms around us — about seventy-five pounds a week — and pick up organic mint several times a week. Even our salt comes from Hale'iwa. That's why guests tell us this is one of the best craft cocktail menus in the country: you can taste exactly where you are.

Order a Lava Lips spiked with Hawaiian chile pepper water, a mojito built on our own Hawaii Mana Rum with local honey and lime, or whatever the bartenders are dreaming up this week. The bar pours Tuesday–Sunday, 11 am–9 pm.

Signature Cocktails You’ll Love

Lava Lips

A spicy, flavorful cocktail with the perfect amount of heat. This fan-favorite is mentioned in review after review—and once you try it, you’ll know why.

Mana Sunrise

Bright, colorful, and layered with flavor, the Mana Sunrise captures the North Shore in a glass. Pro tip: squeeze the lime on top to transform the drink.

Mojito

Classic, refreshing, and perfectly balanced. Guests say our mojito could “convert even the most skeptical palate.”

Nāhele Mojito

A tropical twist on the classic, inspired by the lush forests of O‘ahu. Smooth, refreshing, and uniquely ours.

(Cocktails rotate seasonally—ask your bartenders about specials.)

Rum Worth Traveling For

Our Hawaii Mana Rum has quickly earned a reputation as some of the finest rum in Hawai‘i.

Guests who “swore off rum for years” say they’ve been converted by its smooth flavor and subtle vanilla undertones. Enjoy it neat, in a cocktail, or bring a bottle home as a true taste of Waialua.

A Space with History and Vibes

Our tasting room sits inside the historic Waialua Sugar Mill, blending rustic charm with modern island style. Outside, kids and families love checking out our Vietnam-era Huey helicopter, while adults relax with cocktails, music, and the occasional food truck or karaoke night. It’s a gathering place, a landmark, and a little slice of North Shore history.

Pair it With Local Flavor

Hungry? You don't need to go far. Our neighbors at Surf N Salsa serve up incredible tacos and burritos right next door — perfect with a Lava Lips or Mana Sunrise.

Make an afternoon of it — wander the mill grounds, say hi to the Huey helicopter, and catch live music on the patio. Tacos in one hand, mai tai in the other: that's a perfect Waialua day.
